Jalapeno corn casserole
Ingredients/Components
- sugar - 1 Tbsp
- butter or margarine - 1/2 c
- chopped celery - 1 c
- shredded Cheddar cheese - 1 c
- medium onion, chopped - 1 item
- uncooked regular rice - 1 c
- medium green pepper, chopped - 1 item
- cans creamed corn - 2 oz
- or 2 chopped jalapeno peppers - 1 item
How to make jalapeno corn casserole:
Cook rice; set aside. Saute onion, pepper and celery in butter until tender. Combine rice, sauteed vegetables and rest of ingredients, stirring well. Spoon into lightly greased 12 x 8 x 2-inch baking dish. Bake at 350° for 40 to 45 minutes.This recipe is also good with a pound of cooked sausage in it.
