Ingredients/Components

  • water
  • grated Parmesan cheese - 1/4 c
  • dried basil leaves - 1/2 tsp
  • can condensed beef broth - 1 1/2
  • can whole tomatoes - 1 oz
  • medium onion, sliced - 1 item
  • medium zucchini, cut into 1/4-inch slices - 2 item
  • can garbanzo beans, drained - 1 oz
  • loose Italian sausage - 1 lb

How to make italian vegetable soup:

Cook and stir sausage and onion in a 3-quart saucepan until sausage is light brown; drain. Stir in remaining ingredients except cheese. Break up tomatoes with fork. Heat to boiling. Reduce heat. Cover and simmer until zucchini is tender. Serve with cheese.
