Italian vegetable casserole
Ingredients/Components
- salt - 1 tsp
- grated cheese - 6 tsp
- oregano - 1 tsp
- small can mushrooms - 1 item
- bay leaves - 3 item
- small onions - 3 item
- can crushed tomatoes - 1/2 item
- zucchini, diced - 2 item
- Mozzarella - 3 oz
- medium eggplant, diced - 1 item
How to make italian vegetable casserole:
Saute the first 4 ingredients in oil for 5 minutes. Add tomatoes, bay leaves, oregano, salt and garlic. Cook for 30 minutes. Add grated cheese. Place in small casserole dish. Bake at 350° until heated. Add Mozzarella on top; place back in oven uRecipe categories: Squash, Side dish, Casseroles.
