  • can crushed tomatoes - 1/2 item
  • zucchini, diced - 2 item
  • Mozzarella - 3 oz
  • medium eggplant, diced - 1 item

How to make italian vegetable casserole:

Saute the first 4 ingredients in oil for 5 minutes. Add tomatoes, bay leaves, oregano, salt and garlic. Cook for 30 minutes. Add grated cheese. Place in small casserole dish. Bake at 350° until heated. Add Mozzarella on top; place back in oven u
