  • sugar - 2 c
  • milk - 4 c
  • salt - 1/2 tsp
  • cornstarch - 3 Tbsp
  • eggs, beaten - 10 item
  • pinch of salt - 1 item
  • vinegar - 1 Tbsp
  • shortening
  • egg, beaten - 1 item
  • ice water - 5 Tbsp
  • cooked rice - 3 c
  • rind from 1 large lemon
  • Mix sugar, cornstarch and salt

How to make italian easter rice pie:

Scald milk and add rind; bring to boil, take off heat. Mix sugar, cornstarch and salt. Add eggs to sugar mixture, then add cooked rice. Add warm milk and discard rinds. Pour into 2 crusts.Crusts:3 c. flour1 egg, beaten1 1/4 c. shortening1/3 c. sugar5 Tbsp. ice water1/2 tsp. salt1 Tbsp. vinegar Mix dry ingredients, cut in shortening, add egg, water and vinegar. Bake at 400° for 10 minutes. Then bake at 325° for 30 to 45 minutes, or until table knife inserted comes out clean. Makes two 10-inch deep-dish pies.
