How to make irish soda bread:
Preheat oven to 375°; add all of the dry ingredients in a large bowl and mix well. Pour all buttermilk into the bowl at once and stir with wooden spoon just until a soft dough is formed. Knead for a minute or so until everything comes together. Divide dough into two or three portions; shape into round loaf, pressing the top down down a bit to just barely flatten it. Place loaves on a large non-stick baking sheet. Sprinkle some additional flour on top of each loaf; with knife make cross on top of each loaf. Bake on middle rack of a 375° oven for 40 minutes until loaves are golden brown and done to taste. Cool on racks. Makes 2 loaves.Recipe categories: Breads, Quick breads, Irish.
