Hummingbird cake
Ingredients/Components
- flour - 3 c
- soda - 1 tsp
- salt - 1 tsp
- cinnamon - 1 tsp
- sugar - 2 c
- cooking oil
- eggs - 3 item
- can crushed pineapple, undrained - 1 oz
- bananas, mashed - 2 item
- chopped nuts - 1 c
- Add oil, eggs and pineapple
- butter or oleo - 4 Tbsp
- box powdered sugar, sifted - 1 lb
- vanilla - 1 tsp
- coconut - 1/2 c
How to make hummingbird cake:
Sift flour, soda, salt, cinnamon and sugar together. Add oil, eggs and pineapple. Mix by hand. Add bananas and nuts; mix. Pour into a greased and floured tube pan. Bake at 350° for 1 hour and 5 minutes or until done. Let cool about 10 minutes before removing from pan. Frost.Icing:1 (8 oz.) pkg. cream cheese, softened4 Tbsp. butter or oleo1 (1 lb.) box powdered sugar, sifted1 tsp. vanilla1/2 c. coconut Combine cream cheese, butter and powdered sugar.
