Ingredients/Components
- sugar - 2 c
- vanilla - 1 tsp
- chopped pecans - 1 c
- pkg
- vanilla extract
- salt - 1 tsp
- flour - 3 c
- butter - 1/2 c
- eggs, beaten - 3 item
- baking soda - 1 tsp
- vegetable oil - 1 c
- can crushed pineapple - 1 oz
- ground cinnamon - 1 tsp
- chopped bananas - 2 c
How to make hummingbird cake:
Icing:1 (8 oz.) pkg. cream cheese1/2 c. butter1 (16 oz.) pkg. powdered sugar1 tsp. vanilla Combine the first 5 ingredients in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, pecans and bananas. Spoon batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 30 minutes or until done.Combine cream cheese and butter, beating until smooth. Add remaining ingredients and beat until smooth. Spread icing on cake.
