  • sugar - 2 c
  • vanilla - 1 tsp
  • chopped pecans - 1 c
  • pkg
  • vanilla extract
  • salt - 1 tsp
  • flour - 3 c
  • butter - 1/2 c
  • eggs, beaten - 3 item
  • baking soda - 1 tsp
  • vegetable oil - 1 c
  • can crushed pineapple - 1 oz
  • ground cinnamon - 1 tsp
  • chopped bananas - 2 c

How to make hummingbird cake:

Icing:1 (8 oz.) pkg. cream cheese1/2 c. butter1 (16 oz.) pkg. powdered sugar1 tsp. vanilla Combine the first 5 ingredients in a large bowl. Add eggs and oil, stirring until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, pecans and bananas. Spoon batter into 3 greased and floured 9-inch round cake pans. Bake at 350° for 30 minutes or until done.

Combine cream cheese and butter, beating until smooth. Add remaining ingredients and beat until smooth. Spread icing on cake.
