Ingredients/Components

  • sugar - 2 c
  • cinnamon - 1 tsp
  • cream cheese - 8 oz
  • vanilla
  • salt - 1 tsp
  • nutmeg - 1/2 tsp
  • soda - 1/2 tsp
  • eggs, beaten - 3 item
  • all-purpose flour - 3 c
  • can crushed pineapple - 1 oz
  • allspice - 1/2 tsp
  • box powdered sugar - 1 lb
  • corn oil
  • chopped bananas - 2 c
  • Add eggs and oil, stirring until dry ingredients are moist
  • chopped nuts pecans, walnuts - 1 c

How to make hummingbird cake:

Combine dry ingredients in mixing bowl. Add eggs and oil, stirring until dry ingredients are moist. Do not beat! Stir in vanilla, pineapple, nuts and bananas. Spoon into well-greased cake pans. Best done as layer cake but you can substitute a Bundt pan. Bake at 350° for 30 to 45 minutes or toothpick inserted into center of cake comes out clean. Frost with Cream Cheese Frosting.Cream Cheese Frosting:1 1/4 sticks margarine1 (1 lb.) box powdered sugar8 oz. cream cheese1 tsp. vanilla Beat ingredients on low until well mixed. After well mixed, you can beat on high until mixture is creamy.
