Ingredients/Components
- sugar - 2 c
- chopped pecans - 1 c
- pkg - 1 oz
- vanilla extract - 2 tsp
- salt - 1/2 tsp
- eggs, beaten - 3 item
- baking soda
- vegetable oil
- all-purpose flour - 3 c
- can crushed pineapple, drained - 1 oz
- ground cinnamon - 1 tsp
- chopped bananas - 2 c
- finely chopped pecans optional - 1/2 c
- Combine first 5 ingredients in a large bowl
How to make hummingbird cake:
Preheat oven to 350°. Combine first 5 ingredients in a large bowl. Add eggs, oil and vanilla, stirring until dry ingredients are moistened. Stir in pineapple, pecans and bananas. Pour into three greased and floured 9-inch round cake pans. Bake for 25 to 30 minutes or until a wooden pick inserted into the center comes out clean. Cool in pans 10 minutes; remove from pans and cool on wire racks.Cream Cheese Frosting:1/2 c. butter or margarine, softened1 (8 oz.) pkg. cream cheese, softened2 tsp. vanilla extract1/2 c. finely chopped pecans (optional) Beat butter and cream cheese until fluffy; beat in sugar and vanilla extract until smooth.
