Homemade minestrone
Ingredients/Components
- salt - 1 tsp
- butter - 3 Tbsp
- water
- olive oil - 1 Tbsp
- chopped parsley - 1/4 c
- white wine - 1/2 c
- green onions, chopped - 2 item
- stalks celery, chopped - 2 item
- ground pepper - 1/4 tsp
- can kidney beans - 1 oz
- large clove garlic - 1 item
- small carrot, diced - 1 item
- small shell pasta - 1/4 lb
- can crushed tomatoes or puree - 1 oz
- small, unpeeled zucchini, cut in cubes - 1 item
- or 5 leaves Swiss chard or romaine, chopped - 4 item
How to make homemade minestrone:
Cook beans, salt, garlic, pepper, oil, butter, water and tomatoes over low flame, stir. Prepare vegetables and add to pot. Cover and simmer 1 hour. Add wine and pasta. Simmer 10 or 15 minutes. Serve. Makes 10 servings.Recipe categories: Vegetables, Soups & stews, Beef.
