Ingredients/Components

  • salt - 1 tsp
  • butter - 3 Tbsp
  • water
  • olive oil - 1 Tbsp
  • chopped parsley - 1/4 c
  • white wine - 1/2 c
  • green onions, chopped - 2 item
  • stalks celery, chopped - 2 item
  • ground pepper - 1/4 tsp
  • can kidney beans - 1 oz
  • large clove garlic - 1 item
  • small carrot, diced - 1 item
  • small shell pasta - 1/4 lb
  • can crushed tomatoes or puree - 1 oz
  • small, unpeeled zucchini, cut in cubes - 1 item
  • or 5 leaves Swiss chard or romaine, chopped - 4 item

How to make homemade minestrone:

Cook beans, salt, garlic, pepper, oil, butter, water and tomatoes over low flame, stir. Prepare vegetables and add to pot. Cover and simmer 1 hour. Add wine and pasta. Simmer 10 or 15 minutes. Serve. Makes 10 servings.
