  • salt - 1/4 tsp
  • butter - 1/4 c
  • light cream - 1/4 c
  • lemon juice - 1 Tbsp
  • mustard - 1/2 tsp
  • egg yolks, well beaten - 2 item

How to make hollandaise sauce:

Melt butter. Beat eggs with electric mixer or whisk until smooth; set aside. Add cream, juice, mustard and salt to butter. Stir over medium heat. Add eggs; cook until thickened. Keep stirring until smooth. Serve over broccoli, asparagus or Eggs Benedict.
