Ingredients/Components

  • salt - 1 Tbsp
  • salt and pepper - 1 item
  • juice of 1 lemon
  • large onion, chopped - 1 item
  • clove garlic, chopped - 1 item
  • large can tomatoes - 1 item
  • ham pieces - 1 lb
  • bean mixture
  • pod green or red pepper, chopped - 1 item

How to make hillbilly bean soup:

Wash the bean mixture. Cover with water. Add 1 tablespoon salt; soak for 3 hours or overnight. Drain water. Put beans in 2 quarts of fresh water. Add the remaining ingredients. Cook all day (at least 4 hours). May be kept in covered container in refrigerator up to 4 days.

Sausage, beef, turkey or chicken may be substituted for ham.

Beans to use for mixture: pinto, black-eyed peas, baby limas, speckled limas, large limas, Great Northern, red kidney, navy, black turtle, small reds, yellow split, green split, garbanzos, barley, lentils and Christmas limas.
