Hawaiian pineapple cake
Ingredients/Components
- sugar - 3/4 c
- eggs - 2 item
- pkg - 1 oz
- salt - 1/4 tsp
- flour - 2 c
- soda - 1/4 tsp
- flaked coconut - 1 c
- baking powder - 1 tsp
- shortening - 1/2 c
- ginger - 1/8 tsp
- undrained, crushed pineapple
How to make hawaiian pineapple cake:
Topping: Combine coconut with 1/2 of the pineapple; set aside.Sift together flour, baking powder, salt, soda and ginger. Cream together shortening and sugar. Beat in eggs. Add flour mixture to creamed mixture, alternately with remaining pineapple. Add chocolate chips. Spread in greased loaf pan. Sprinkle topping over cake and bake at 350° for 25 minutes. Cool before cutting.
