  • Add eggs; beat 2 minutes at medium speed
  • Cook until thickened
  • Creamy Nut Filling - 1 item
  • White Snow Frosting - 1 item

How to make blue ribbon banana cake:

Cream together shortening and sugar until fluffy. Add eggs; beat 2 minutes at medium speed. Add mashed bananas. Beat 2 minutes. Sift together dry ingredients. Add to creamed mixture along with buttermilk and vanilla. Beat 2 minutes. Stir in nuts. Turn into 2 greased and floured 9-inch layer pans. Sprinkle 1/2 cup coconut on each layer. Bake in a moderate (375°) oven 25 to 30 minutes. Remove from pan. Cool layers, coconut side up, on rack. Place first layer coconut side down and spread on filling. Top with second layer, coconut side up. Swirl White Snow Frosting around sides and about 1 inch around top edge, leaving center unfrosted.Creamy Nut Filling:1/2 c. sugar2 Tbsp. flour1/2 c. cream2 Tbsp. butter1/2 c. chopped pecans1/4 tsp. salt1 tsp. vanilla Cream sugar, flour, cream and butter in heavy saucepan. Cook until thickened. Add pecans, salt and vanilla; cool.White Snow Frosting:1 egg white1/4 c. shortening1/4 c. butter1/2 tsp. coconut extract1/2 tsp. vanilla2 c. sifted confectioners sugar Cream together egg whites, shortening, butter, coconut extract and vanilla until well blended. Gradually add sugar, beating until light and fluffy.
