Hawaiian pineapple cake
Ingredients/Components
- sugar
- milk - 2/3 c
- salt - 1 tsp
- butter - 1 Tbsp
- cornstarch - 3 Tbsp
- baking powder
- lemon juice - 1 tsp
- soft shortening - 1/2 c
- crushed pineapple
- pineapple juice - 3/4 c
- flavoring - 1 tsp
- sifted Softasilk flour
- milk after beating
- Add shortening, 2/3 cup milk and flavoring
How to make hawaiian pineapple cake:
Sift together into bowl flour, sugar, baking powder and salt. Add shortening, 2/3 cup milk and flavoring. Beat 2 minutes. Add another 1/3 cup milk and the egg whites. Beat 2 more minutes. Pour into prepared pans. Bake until cake tests done. Cool. Put cooled layers together with pineapple filling, spreading about 1/2 cup over center of top layer. Frost sides and a 1 1/2-inch border on top with a fluffy white icing. Time: Layers 30 to 35 minutes, oblong 35 to 40 minutes, both at 350°.Pineapple Filling:1/2 c. sugar3 Tbsp. cornstarch1/2 tsp. salt3/4 c. pineapple juice about 1 c. crushed pineapple1 Tbsp. butter1 tsp. lemon juice Mix in saucepan sugar, cornstarch and salt. Stir in gradually the pineapple juice and pineapple. Bring to boil over direct heat, stirring constantly. Boil 1 minute. Remove from heat. Stir in butter and lemon juice.
