Grilled eggplant sandwich
Ingredients/Components
- clove garlic, minced - 1 item
- olive oil - 1/4 1/2
- Mozzarella cheese - 1 item
- medium red bell pepper - 1 item
- lettuce and tomato - 1 item
- your favorite Italian dressing - 1 item
- small eggplant, sliced into 1/4-inch slices - 1 item
- sweet French roll - 1 item
How to make grilled eggplant sandwich:
Roast bell pepper in oven set at broil. Lightly blacken each side and turn often. When all sides are done, place in a stainless steel bowl. Cover tightly with clear wrap and allow to cool. Once cool, peel off burnt skin and discard seeds. Cut into strips.Mix olive oil and garlic. Brush both sides of eggplant with oil mixture and bake on a greased cookie sheet at 350°, turning once until done (20 to 30 minutes).
Brush sliced French roll with your Italian dressing. Layer lettuce, tomatoes, eggplant, bell pepper and cheese on roll.
