Ingredients/Components
- granulated sugar - 1 Tbsp
- baking powder - 3 tsp
- melted butter - 3 Tbsp
- flour, sifted - 2 c
- salt, sifted with flour - 3/4 tsp
- egg yolks and whites, beaten separately - 3 item
- sweet milk scant
How to make griddle cakes:
Sift flour, baking powder, salt and sugar together. Beat yolks of eggs. Add flour mixture alternately with milk. Just before baking, add butter and fold in stiffly beaten egg whites. Use hot griddle. For thick cakes, use 1 to 1 1/3 cups milkFrom old Watkins cookbook, c. 1938.
