Green tomato relish
Ingredients/Components
- sugar - 8 c
- vinegar - 1/2 gal
- chopped onion - 3 qt
- chopped bell pepper - 3 qt
- chopped green tomatoes
- hot pepper - 1 qt
How to make green tomato relish:
First, put chopped tomatoes in large pan. Sprinkle with 1 cup salt; let set 1 hour or longer. Can leave overnight; stir occasionally. Put through colander to get all juice off tomatoes. Mix all together. Cook slow until tender, 20 or 30 minutes. Check often so as not to overcook. Seal in jars.Recipe categories: Sauces, Condiments, etc., Side dish.
