Ingredients/Components

  • salt - 1 tsp
  • oil
  • cider vinegar - 1/4 c
  • pepper - 1/4 tsp
  • oregano - 1/2 tsp
  • cucumber, sliced - 1 item
  • tomato, cut in wedges - 1 item
  • large head romaine lettuce - 1 item
  • can ripe olives, sliced - 1 1/4
  • Vinaigrette Dressing - 3/4 c
  • radishes, sliced thinly - 6 item
  • Feta cheese, Monterey Jack cheese or crumbled cottage cheese - 8 oz

How to make greek salad:

Vinaigrette Dressing:1/2 c. oil1/4 c. cider vinegar1 tsp. salt1/4 tsp. pepper1/2 tsp. oregano Wash lettuce; pat dry on paper towels. Tear into bite-size pieces into a bowl. Add cheese, olives and vegetables. Toss to mix; refrigerate.

To prepare Vinaigrette Dressing, combine oil, cider vinegar, salt and pepper in covered jar. Add oregano and shake well. Add to chilled salad ingredients just before serving; toss lightly to mix. Makes 6 to 8 servings.
