Ingredients/Components
- salt - 1 tsp
- oil
- cider vinegar - 1/4 c
- pepper - 1/4 tsp
- oregano - 1/2 tsp
- cucumber, sliced - 1 item
- tomato, cut in wedges - 1 item
- large head romaine lettuce - 1 item
- can ripe olives, sliced - 1 1/4
- Vinaigrette Dressing - 3/4 c
- radishes, sliced thinly - 6 item
- Feta cheese, Monterey Jack cheese or crumbled cottage cheese - 8 oz
How to make greek salad:
Vinaigrette Dressing:1/2 c. oil1/4 c. cider vinegar1 tsp. salt1/4 tsp. pepper1/2 tsp. oregano Wash lettuce; pat dry on paper towels. Tear into bite-size pieces into a bowl. Add cheese, olives and vegetables. Toss to mix; refrigerate.To prepare Vinaigrette Dressing, combine oil, cider vinegar, salt and pepper in covered jar. Add oregano and shake well. Add to chilled salad ingredients just before serving; toss lightly to mix. Makes 6 to 8 servings.
