Ingredients/Components

  • sugar - 5 lb
  • water - 2 pt
  • vinegar - 2 pt
  • ginger - 1/2 c
  • alum - 1/2 c
  • cucumbers - 5 lb
  • drops green food coloring - 6 item
  • pickle spices - 1/2 pkg

How to make ginger pickles:

Peel and cut cucumbers in small strips. Soak 24 hours (2 gallons water and 3 cups lime). Rinse well. Soak 2 hours in alum and water to cover them. Wash 3 times. Soak 6 hours in ginger and water to cover. Rinse well. Drain.

Mix vinegar, 2 pints water, sugar, pickle spice and food coloring. Bring to boil and pour over drained cucumber. Cool and put in jars; seal.
