Ingredients/Components

  • sugar - 1 c
  • flour
  • butter - 1/2 lb
  • baking powder - 1/2 tsp
  • walnuts, chopped - 2 c
  • pecans, chopped - 2 c
  • candied pineapple - 1/2 lb
  • dates - 1 c
  • red candied cherries
  • green candied cherries - 1/4 lb
  • pure lemon extract - 1 Tbsp
  • pure orange extract - 1 Tbsp
  • large eggs, beaten well - 5 item

How to make fruit cake:

Cream butter and sugar; add eggs. Dredge fruit in part of flour. Add extracts to egg mixture. After dredging fruit; add to egg mixture and also add remaining flour. Add nuts and mix well. Grease tube pan. Pour batter into tube pan and place in cold oven. Bake at 250° for 3 hours. (Put a pan with 2 cups water on bottom shelf of oven.) Batter can be baked in 1 pound loaf pans or cupcakes at 250° for 1 1/2 hours.
