- egg - 1 item
- pepper to taste - 1 item
- salt to taste - 1 item
- eggplant
- flour as needed - 1 item
- Crisco for frying - 1 item
How to make fried eggplant:
Cook peeled and cut up eggplant in water until tender. Drain all water. Mash eggplant; mix in egg, salt and pepper. Add enough flour to make slightly thick. Drop by teaspoon into hot grease.
