Ingredients/Components
- Olive Oil - 2 c
- big Eggplant - 1 item
- box Bacalaitos Mixture - 1 item
- Adobo/salt - 1 tsp
How to make fried eggplant:
Mix bacalaitos according to instructions on box. Mix well and pour mixture in a deep bowl. Add adobo if desired. Heat pan with oil till hot. Cut eggplant into slices. Dip into the bacalaito mixture and place in pan. Cook each side for 1-2 minutes and remove from pan. Cool for a few minutes before serving.Recipe categories: Appetizers, Side dish, Vegetables.
