  • yellow cornmeal - 2/3 c
  • catfish fillets
  • shortening or cooking oil - 1 item
  • mustard prepared - 2 Tbsp

How to make fried catfish:

Spread catfish with a thin coating of mustard. Combine cornmeal, salt, pepper and red pepper in a plastic bag. Add fish and shake to coat. Heat cooking oil to 375° in a deep 12-inch skillet. Fry fillets, two at a time, until fish is golden brown,
