Ingredients/Components

  • salt - 1/2 tsp
  • all-purpose flour - 1/4 c
  • egg white - 1 item
  • paprika - 1 tsp
  • skim milk - 2 Tbsp
  • ground red pepper - 1/8 tsp
  • grated Parmesan cheese - 1/4 c
  • sesame seed - 1/2 tsp
  • ground black pepper - 1/2 tsp
  • yellow cornmeal - 1/4 c
  • catfish fillets - 4 (4
  • butter-flavored cooking spray - 1 item

How to make baked catfish:

Combine first 7 ingredients; set aside. Whisk together egg white and milk. Dip fillets in milk mixture and dredge in cornmeal mixture. Place on a foil-lined baking sheet coated with cooking spray. Sprinkle fillets with sesame seed and coat each fillet with cooking spray. Bake at 350° for 30 minutes or until fish flakes easily when tested with a fork. Serve with lemon wedges.
