French onion soup
Ingredients/Components
- margarine or butter - 2 Tbsp
- Worcestershire sauce - 1 tsp
- grated Parmesan cheese - 1 item
- sprigs parsley - 2 item
- small bay leaf - 1 item
- medium onions, sliced - 3 item
- dried thyme leaves - 1/8 tsp
- soup can water - 1 item
- thin slices French bread, toasted - 2 item
- Beef Consomme see recipe following - 4 c
- Add beef consomme and Worcestershire sauce; heat to boiling
How to make french onion soup:
Cover and cook onions in margarine in 3-quart saucepan over low heat, stirring occasionally, for 30 minutes. Add beef consomme and Worcestershire sauce; heat to boiling. Reduce heat; cover and simmer 30 minutes. Place 1/2 slice toasted bread in each of four soup bowls and pour hot soup over toast and sprinkle with cheese. Makes 4 servings (about one cup each).Beef Consomme:2 (10 1/2 oz.) cans condensed beef broth (about 2 1/2 c.)1 soup can water1 small onion, sliced (about 1/4 c.)1 small carrot, sliced (about 1/4 c.)1 small stalk celery, sliced (about 1/4 c.)2 sprigs parsley1 small bay leaf1/8 tsp. dried thyme leaves Heat all ingredients to boiling and reduce heat.
