Ingredients/Components

  • egg - 1 item
  • salad oil - 2 Tbsp
  • clove garlic, minced - 1 item
  • grated Parmesan cheese - 2 Tbsp
  • chopped fresh parsley - 1 Tbsp
  • Mozzarella cheese, shredded - 1 c
  • can tomato paste - 1 oz
  • can tomato soup - 1 item
  • finely chopped onion - 1/2 c
  • small bay leaf - 1 item
  • container Ricotta cheese - 1 (15
  • oregano leaves, crushed - 1/2 tsp
  • soup can water - 1 item
  • manicotti shells, cooked and drained - 10 item

How to make baked manicotti:

To make sauce: In a 3-quart saucepan over medium heat, in hot oil, cook onion, garlic and oregano until onion is tender. Stir in soup, water, tomato paste, Parmesan cheese and bay leaf. Heat to boiling; reduce heat. Simmer, uncovered, for 30 minutes, or until desired consistency, stirring occasionally. Discard bay leaf.

To make filling: In medium bowl, combine Ricotta, Mozzarella, 1/4 cup Parmesan, egg and parsley; stir to mix well. Using spoon or pastry bag, fill each manicotti shell with 1/4 cup of the cheese filling.

Spoon 1 cup of the sauce into a 12 x 8-inch baking dish. Arrange manicotti over sauce. Top with remaining sauce and remaining 1/4 cup Parmesan cheese. Bake at 350° for 30 minutes, or until hot. Makes 5 servings.
