  • onion, chopped
  • butter - 3 Tbsp
  • olive oil - 1 Tbsp
  • salt - 1 tsp
  • sugar - 1/2 tsp
  • flour - 3 Tbsp
  • beef broth or 6 cans beef broth - 2 qt
  • vermouth - 1/2 c
  • salt and pepper - 1 item

How to make french onion soup:

Cook first 3 ingredients for 15 minutes in a covered pan. Add salt and sugar. Cook 30 to 40 minutes (or until golden brown) over low heat. Blend in flour and cook for 3 minutes. Blend in boiling beef broth. Add vermouth and salt and pepper to taste. Simmer 30 to 40 minutes. Serves 8 to 10.
