Ingredients/Components

  • salt - 1/4 tsp
  • flour - 1 Tbsp
  • butter - 2 Tbsp
  • paprika - 1/4 tsp
  • pepper - 1/4 tsp
  • salt and pepper - 1 item
  • parsley - 1 Tbsp
  • olive oil - 1 Tbsp
  • thickly sliced mushrooms - 1 c
  • Marsala - 1/3 c
  • veal, cut in 1/4-inch thick slices - 3/4 lb
  • paper thin slices lemon - 4 item

How to make veal marsala:

Combine flour, salt, pepper and paprika in a flat dish. Dip veal in this flour mixture.

Heat 1 tablespoon butter and the olive oil in a large skillet. Add mushrooms. Cook quickly for 2 minutes. Lift out with slotted spoon and set aside. Add rest of butter to skillet and heat well. Add veal and brown quickly on both sides. Lift pan from heat and let cool 1 minute, then add Marsala. Sprinkle each piece of veal lightly with salt and pepper. Cover pan tightly. Return to low heat and simmer 10 minutes or until veal is tender.

Lift veal out onto hot platter. Add parsley and mushrooms to drippings in pan. Add a little hot water or more Marsala if too dry. Heat mushrooms well and pour over veal.
