  • Vidalia onions - 2 lb
  • butter, melted - 4 Tbsp
  • oil - 2 Tbsp
  • salt - 1 tsp
  • flour - 3 Tbsp
  • beef and chicken broth combined - 2 qt
  • French bread - 1 item
  • Swiss cheese - 1 c
  • olive oil - 1 item
  • garlic powder - 1 item

How to make french onion soup:

Peel, wash and thinly slice onions. Saute in butter and oil over low heat, uncovered. Sprinkle with salt. Cook for 20 or 30 minutes, stirring occasionally (until golden brown). Sprinkle and stir in flour and allow to cook slowly for 2 or 3 minutes while stirring. Add the onion mixture to beef and chicken broth. Simmer partially uncovered for 30 to 40 minutes. While soup is cooking prepare bread.

Slice French bread into 1-inch slices. Brush with olive oil and sprinkle with garlic powder. Bake on cookie sheet for 15 minutes at 325°. Turn the slices over and bake until both sides are dry and brown.

While bread is baking grate Swiss cheese. When the bread is dry and brown place slices (if you wish, you can make croutons instead of slices) in the bottom of individual ovenproof soup bowls. Then ladle the onion soup over the slices. Sprinkle the top with the grated Swiss cheese. You can brush the cheese with a little olive oil. Place in 375° oven for 10 to 20 minutes until cheese is hot and bubbly. If you wish, you can place in broiler for a few minutes after the oven to brown the top.
