Ingredients/Components

  • salt - 2 tsp
  • pepper - 1/4 tsp
  • Worcestershire sauce - 1 tsp
  • basil - 1/2 tsp
  • large onion, chopped - 1 item
  • dill weed - 1/2 tsp
  • cloves garlic, diced - 2 item
  • large cans evaporated milk - 2 item
  • medium potatoes, cubed - 2 item
  • haddock fillets - 2 lb
  • salt pork or 2 slices bacon, chopped - 1/4 lb
  • a few chopped celery tops - 1 item

How to make fish chowder:

Fry up salt pork or bacon in soup pot until crisp. Remove fat bits and leave fat. Place onion and garlic in pot and fry until soft. Add potatoes, celery tops and Worcestershire sauce. Barely cover with water and cook until potatoes are just soft. Lay fish fillets over potatoes. Cover and cook until the fish flakes and crumbles. Add rest of seasonings and evaporated milk. Heat, but do not boil.

Chowder will get better as it stands on the stove this way. Let chowder heat on very low stove for about 2 hours before serving. Makes 8 to 10 servings.
