Ingredients/Components

  • butter or margarine - 3 Tbsp
  • salt - 4 tsp
  • evaporated milk - 1 c
  • boiling water - 3 c
  • pepper - 1/4 tsp
  • parsley - 1 item
  • medium onions, sliced - 3 item
  • salt pork - 1/4 lb
  • fresh cod fillets
  • medium potatoes, pared, sliced or diced - 5 item
  • milk, scalded * - 1 qt

How to make fish chowder:

Cut salt pork into 1/2 cubes. Cook in large kettle until crispy. Remove bits and reserve. To hot pork fat, add onions. Cook until tender, stirring often. Top with potatoes. Sprinkle with salt and pepper. Pour on boiling water. Top with fish cut into medium pieces. Cover and simmer 25 minutes or until potatoes are tender. Add milk and evaporated milk. Sprinkle with parsley. Yields 6 servings.

*When I make this, I use all evaporated milk. It makes chowder thicker. Use same amount as evaporated milk.
