  • pepper - 1/2 tsp
  • medium onion, diced - 1 item
  • corn tortillas - 1 2
  • chuck roast - 2 3
  • sour cream for garnish - 1 item
  • bottle salsa - 1 oz
  • tomato sauce more if needed - 2 (8
  • sliced black olives for garnish; optional - 1 item

How to make enchiladas:

Cook meat, salt, pepper, garlic and onion until very tender. (I use pressure cooker and cook at 5 pounds pressure for 30 minutes.) Ground meat may be used but do not pressure cook; shredded meat is better. Use two forks to pull meat apart until shredded.

Mix salsa and tomato sauce in pan and heat. Dip each tortilla into sauce to slightly soften. Place on plate and spread 2 to 3 tablespoons meat down the middle. Sprinkle with Jack cheese and roll up. Place in baking pan with loose side down. Cover lightly with sauce to prevent drying. Repeat until meat is gone. Spoon remaining sauce over tortillas and sprinkle top with Cheddar cheese. Bake at 325° to 350° for about 20 minutes. Garnish with sour cream and sliced black olives. Goes well with salad and Spanish rice.
