Ingredients/Components
- onion, diced - 1/2 item
- corn tortillas - 2 doz
- Longhorn cheese - 1 lb
- cans black pitted olives, chopped - 2 item
- can Chile De Las Palmas enchilada sauce - 1 item
How to make enchiladas:
Mix grated cheese, onion and olives in bowl.Heat in saucepan the enchilada sauce, add 1/2 cup water. Simmer, will turn a little thick. Set aside. In skillet, add 1/2 cup oil. Dip corn tortillas one at a time in oil, dip in sauce and lay flat in deep pan, lining tortillas across pan. Add mixture of cheese, onion and olives on corn tortillas, 1 dozen each layer. Heat in oven at 375° for 20 minutes.
