Ingredients/Components

  • cornstarch - 1/2 c
  • paprika - 2 tsp
  • chili powder - 2 tsp
  • ground beef - 2 lb
  • salt and pepper to taste - 1 item
  • cans tomato sauce
  • grated Cheddar cheese - 1 lb
  • ground cumin - 3 tsp
  • grated Mozzarella cheese - 1 lb
  • corn tortillas - 1 doz
  • cans water - 2 oz
  • medium onions, diced - 2 item
  • garlic - 2 tsp
  • ground cayenne pepper - 1 tsp
  • large can black olives, pitted - 1 item

How to make enchiladas:

Sauce:2 (8 oz.) cans tomato sauce2 (8 oz.) cans water3 tsp. ground cumin2 tsp. garlic2 tsp. paprika2 tsp. chili powder1/2 c. cornstarch1 tsp. ground cayenne pepper salt and pepper to taste Sauce: Combine tomato sauce, water and spices in saucepan. Bring to a boil; thicken with cornstarch.

Fry ground beef; drain off fat. Add diced onions, sliced olives and cheese to fried ground beef. Add 1 cup of cooked sauce to ground beef mixture. Cook tortillas in hot grease (to soften). Place ground beef mixture on cooked tortillas; roll in desired shape. Put in a 3-inch deep cake pan; pour sauce over top. If desired, save some of the cheese to sprinkle over top. Bake in a 350° oven for 15 minutes. Remove and serve hot with refried beans and a salad.
