Ingredients/Components

  • salt - 1 tsp
  • flour - 1 Tbsp
  • clove garlic, minced - 1 item
  • chili powder - 2 tsp
  • 4 oz - 1 lb
  • minced onion - 2 Tbsp
  • Tabasco - 1/4 tsp
  • fat or drippings - 2 Tbsp

How to make enchilada sauce:

Brown onion in hot fat. Stir in flour, then stir in rest of ingredients. Add about 1/2 cup tomato juice (drained from tomatoes) to make a sauce of medium thickness. Let simmer until thickened.

Note: Enchiladas fit perfectly in 11 1/2 x 7 1/2 x 1 1/2-inch baking dish or 13 x 9 1/2 x 2-inch pan.
