Eggplant fritters
Ingredients/Components
- flour - 2 Tbsp
- baking powder - 1 tsp
- egg - 1 item
- salt and pepper - 1 item
- chopped green onion - 1 tsp
- dash of cinnamon - 1 item
- small eggplant - 1 item
How to make eggplant fritters:
Peel and cube eggplant. Boil until tender (mushy). Drain and return to pot or mixing bowl. Add remaining ingredients and beat until completely mixed. Using teaspoon, drop into hot grease. Fry until golden brown and turn. Makes about 20 fritters.Recipe categories: Squash, Side dish, Vegetables.
