  • can cream of mushroom soup - 1 item
  • stick oleo - 1/2 item
  • salt and black pepper to taste - 1 item
  • medium onion, grated - 1 item
  • bell pepper, chopped fine - 1/2 item
  • crushed saltines - 1 c
  • cooked eggplant - 1 c
  • grated, medium cheese - 1 c

How to make eggplant casserole:

Melt the oleo in a 1 1/2-quart baking dish. Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese. Bake at 350° for 30 minutes in a preheated oven.
