Ingredients/Components
- can cream of mushroom soup - 1 item
- stick oleo - 1/2 item
- salt and black pepper to taste - 1 item
- medium onion, grated - 1 item
- bell pepper, chopped fine - 1/2 item
- crushed saltines - 1 c
- cooked eggplant - 1 c
- grated, medium cheese - 1 c
How to make eggplant casserole:
Melt the oleo in a 1 1/2-quart baking dish. Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese. Bake at 350° for 30 minutes in a preheated oven.Recipe categories: Side dish, Vegetables, Casseroles.
