Ingredients/Components
- sugar - 2 c
- eggs - 4 item
- vanilla - 1 tsp
- pkg - 5 oz
- milk - 1 c
- sour cream
- salt - 1/8 tsp
- baking powder - 3 tsp
- plain flour - 3 c
- margarine - 1 c
How to make coconut cake:
Filling:16 oz. sour cream5 (6 oz.) pkg. frozen coconut2 1/2 c. sugar Cream margarine and sugar a little at a time. Beat in eggs, one at a time. Add flour that has been sifted with baking powder and salt. Add one-fourth of the flour and one-fourth of the milk until all flour and milk has been added. Add vanilla. Bake in three 9-inch cake pans at 350° for about 30 minutes.Filling: Mix sour cream, sugar and coconut. Refrigerate overnight. Split layers and add filling. Let the cake set a couple of days before cutting. Keep refrigerated.
