Eggnog cake
Ingredients/Components
- sugar
- eggs - 3 item
- butter or margarine - 1/4 c
- salt - 1 tsp
- cornstarch - 1 Tbsp
- nutmeg - 1 2
- baking powder - 2 tsp
- all-purpose flour - 2 c
- almond flavoring - 1/2 tsp
- 13 oz - 1 lb
- whipping cream do not use substitute
- rum or orange flavoring - 2 3
- Blend 1/2 minute at low speed and 3 minutes at medium speed
How to make eggnog cake:
In order given, measure ingredients into large mixer bowl. Blend 1/2 minute at low speed and 3 minutes at medium speed. Pour into greased and floured 9 x 5-inch loaf pan. Bake at 350° for 60 to 70 minutes until toothpick inserted in center comes out clean. Remove from pan immediately. Serve with Fruit Sauce (recipe follows).Fruit Sauce:1/3 c. brown sugar1 Tbsp. cornstarch1 lb. 13 oz. fruit cocktail, peaches or apricot halves1/2 tsp. almond flavoring1/4 c. butter or margarine In medium saucepan, stir together sugar, cornstarch and syrup from well-drained fruit of your choice. Add almond flavoring and butter. Using medium heat, bring to a full boil, stirring constantly. Boil 1 minute. Remove from heat; stir in fruit.
