Easy spanish rice
Ingredients/Components
- chopped onion - 1/2 c
- chopped green pepper - 1/3 c
- slices bacon - 3 item
- V-8 juice - 3 c
- white rice - 1 c
How to make easy spanish rice:
In skillet, cook bacon until crisp. Remove and crumble. In drippings over low heat, cook rice and onion until rice is browned and onion is soft, stirring constantly. Add V-8 juice and green pepper. Reduce heat to low and cover. Simmer 20 minutes or until rice is tender and liquid is absorbed. Garnish with bacon. Makes 4 cups.Recipe categories: Side dish, Main dish, One Dish meal.
