Curried pumpkin soup
Ingredients/Components
- butter or margarine - 2 Tbsp
- salt - 1/2 tsp
- all-purpose flour - 2 Tbsp
- honey - 1 Tbsp
- ground nutmeg - 1/4 tsp
- pepper - 1/4 tsp
- chopped onion - 1/2 c
- curry powder - 1/2 1
- can evaporated milk - 1 oz
- can solid-pack pumpkin - 1 oz
- fresh chives optional - 1 item
How to make curried pumpkin soup:
In large saucepan, saut the onion in butter until tender. Stir in flour and curry powder until blended. Gradually add broth. Bring to a boil; cook and stir for 2 minutes or until thickened. Add pumpkin, milk, honey, salt, pepper and nutmeg; heat through. Serve garnished with fresh chives, if desired. Makes 6 servings.Recipe categories: Low protein, Low fat, Soups & stews.
