Curried pumpkin soup
Ingredients/Components
- milk - 1 qt
- butter - 2 Tbsp
- ground cinnamon - 1/2 tsp
- ground ginger - 1/4 tsp
- orange juice - 1/2 1
- curry powder - 1/2 1
- orange rind - 1 2
- freshly grated nutmeg - 1/2 tsp
- ground mace - 1/2 tsp
- sea salt to taste - 1 item
- fresh pumpkin, peeled and diced - 2 lb
- mild honey - 4 Tbsp
- whipped cream or plain yogurt for garnish - 1 item
- sunflower seeds or chopped pecans - 2 Tbsp
How to make curried pumpkin soup:
Steam chopped pumpkin 15 to 20 minutes or until soft. Puree. Combine pumpkin, milk, honey and butter in a soup pot. Bring to a simmer over low heat. Stir together to blend. Add spices and salt.
