Curried pumpkin soup



Ingredients/Components
- half and half - 1 c
- salt - 1 tsp
- nutmeg - 1/4 tsp
- ginger - 1/4 tsp
- chicken broth - 4 c
- bay leaf - 1 item
- curry powder - 1/2 tsp
- onion, chopped - 1 large
- white pepper - 1/4 tsp
- unsalted butter - 4 Tbsp
- medium leek white part only, cleaned and chopped - 1 item
- pumpkin puree canned or fresh - 1 lb
- chopped chives for garnish - 1 item
How to make curried pumpkin soup:
Melt butter in 3-quart saucepan over moderate heat. Add onion and leek; saut??©, stirring often, until soft, about 8 minutes. Stir in pumpkin, chicken broth and spices.
