Ingredients/Components

  • half and half - 1 c
  • salt - 1 tsp
  • nutmeg - 1/4 tsp
  • ginger - 1/4 tsp
  • chicken broth - 4 c
  • bay leaf - 1 item
  • curry powder - 1/2 tsp
  • onion, chopped - 1 large
  • white pepper - 1/4 tsp
  • unsalted butter - 4 Tbsp
  • medium leek white part only, cleaned and chopped - 1 item
  • pumpkin puree canned or fresh - 1 lb
  • chopped chives for garnish - 1 item

How to make curried pumpkin soup:

Melt butter in 3-quart saucepan over moderate heat. Add onion and leek; saut??, stirring often, until soft, about 8 minutes. Stir in pumpkin, chicken broth and spices. Bring to a boil, stirring; reduce the heat and simmer, uncovered, for 15 minutes.
