Cucumber yogurt salad
Ingredients/Components
- sugar - 1 tsp
- salt - 1/2 tsp
- grated carrots - 1/2 c
- plain low-fat yogurt - 1/2 c
- reduced calorie mayonnaise - 2 Tbsp
- thinly sliced red onion - 1/4 c
- sliced, peeled cucumbers - 2 c
- dill weed, crushed
How to make cucumber yogurt salad:
In a medium bowl, mix yogurt, mayonnaise, dill weed, sugar and salt. Add cucumbers, carrots and onion. Stir to coat with yogurt mixture. Serve immediately. Yields 4 portions (3 cups).Per Portion: 60 calories, 2 gm protein, 3 gm fat, 80 mg. calcium.
