Creme de menthe squares
Ingredients/Components
- graham cracker crumbs - 2 c
- vanilla - 1 tsp
- unsweetened cocoa powder - 1/2 c
- semi-sweet chocolate pieces
- egg, beaten - 1 item
- powdered sugar, sifted
- margarine, divided
- green creme de menthe - 1/3 c
How to make creme de menthe squares:
Bottom Layer: In saucepan, combine 1/2 cup of the margarine and cocoa. Heat and stir until well blended. Remove from heat; add 1/2 cup of sugar, egg and vanilla. Stir in graham cracker crumbs. Mix well. Press into bottom of ungreased 13 x 9 x 2-inch baking pan.Middle Layer: Melt another 1/2 cup margarine. In a small mixer bowl, combine margarine and creme de menthe. At low speed of mixer, beat in the remaining 3 cups powdered sugar until smooth. Spread over chocolate layer. Chill 1 hour.
Top Layer: In small saucepan, combine the remaining 1/4 cup margarine and chocolate pieces. Cook and stir over low heat until melted. Spread over mint layer. Chill 1 to 2 hours. Cut into 96 squares. Store in refrigerator.
