  • milk - 4 c
  • sour cream - 1 c
  • salt - 2 tsp
  • flour - 2 Tbsp
  • paprika - 2 tsp
  • pepper - 1/4 tsp
  • slices bacon, cut up - 4 item

How to make creamy potato soup:

In a large saucepan, cook bacon until crisp. Drain bacon, reserving 3 tablespoons drippings in pan. Set bacon aside. Add chopped potatoes, onion, carrot and celery to bacon drippings. Cover and cook over low heat about 20 minutes or until potatoes are tender, stirring occasionally. Stir in the milk, salt and pepper; bring mixture to boiling.

Stir together sour cream, flour and paprika; gradually stir about 1 cup of hot mixture into sour cream mixture. Return to remaining hot mixture in saucepan. Cook and stir just until the mixture bubbles. Top with the bacon pieces. Serve immediately. Makes 6 to 8 servings.
