Ingredients/Components

  • butter, softened - 2 Tbsp
  • sugar
  • eggs - 2 item
  • vanilla - 2 tsp
  • milk - 2 c
  • salt - 1/8 tsp
  • butter - 1/4 c
  • cornstarch - 2 Tbsp
  • water - 1/2 c
  • all-purpose flour - 1/2 c
  • powdered sugar - 1 item
  • egg yolks, slightly beaten - 2 item
  • Cream Filling - 1 item

How to make cream puffs:

Cream Filling:1/3 c. sugar2 Tbsp. cornstarch1/8 tsp. salt2 c. milk2 egg yolks, slightly beaten2 Tbsp. butter, softened2 tsp. vanilla Cream Puffs: Heat oven to 400°. Heat water and butter to rolling boil in saucepan. Stir in flour. Stir vigorously over low heat until mixture forms a ball. Remove from heat. Beat in eggs all at once. Continue beating until smooth. Drop by scant 1/4 cupfuls about 3 inches apart onto ungreased cookie sheet. Bake until puffed and golden, 35 to 40 minutes. Cut off tops and fill with Cream Filling. Replace tops and dust with powdered sugar.

Cream Filling: Mix sugar, cornstarch and salt. Stir in milk gradually. Cook over medium heat, stirring constantly, until mixture thickens. Boil and stir 1 minute. Stir at least 1/2 of the hot mixture gradually into egg yolks. Blend into hot mixture. Boil 1 minute. Remove from heat. Stir in butter and vanilla; cool.
