Cream of zucchini soup
Ingredients/Components
- salt - 1/2 tsp
- butter - 2 Tbsp
- heavy cream - 1/2 c
- clove garlic, minced - 1 item
- chicken broth
- curry powder - 1/2 tsp
- zucchini, sliced - 1 lb
- to 3 scallions, chopped - 2 item
- Add scallions, garlic and zucchini
How to make cream of zucchini soup:
Melt butter. Add scallions, garlic and zucchini. Cover and simmer for 10 minutes, stirring occasionally. Do not brown. Spoon into blender. Add salt, curry, cream and 3/4 cup broth.
