Ingredients/Components

  • salt - 1/2 tsp
  • butter - 2 Tbsp
  • heavy cream - 1/2 c
  • clove garlic, minced - 1 item
  • chicken broth
  • curry powder - 1/2 tsp
  • zucchini, sliced - 1 lb
  • to 3 scallions, chopped - 2 item
  • Add scallions, garlic and zucchini

How to make cream of zucchini soup:

Melt butter. Add scallions, garlic and zucchini. Cover and simmer for 10 minutes, stirring occasionally. Do not brown. Spoon into blender. Add salt, curry, cream and 3/4 cup broth. Blend, then add 1 cup broth. Garnish with chopped chives, if desired. Serves 4.*INXSALADS:
