Cranberry chicken
Ingredients/Components
- butter or margarine - 2 Tbsp
- ground ginger - 1/2 tsp
- paprika - 1/2 tsp
- ground red pepper - 1/4 tsp
- sesame seed - 2 tsp
- bread crumbs - 1/4 c
- chicken breasts - 3 item
- sunflower seeds - 1/4 c
- dried parsley - 2 tsp
- onion salt to taste - 1 item
- can whole cranberry sauce - 1 oz
- finely chopped peanuts - 1/4 c
How to make cranberry chicken:
Remove skin and bones from chicken breasts, then halve lengthwise. Place each piece of chicken, boned side up, between two pieces of plastic wrap, and pound lightly to 1/4-inch thickness. Sprinkle lightly with onion salt. Place 1 to 2 tablespoons of cranberry sauce in the center of each flattened breast, then roll and secure with a toothpick, if necessary. Brush outside with melted butter or margarine.Combine bread crumbs, peanuts, sunflower seeds, sesame seed, parsley, paprika, ginger and red pepper in a bowl. Coat chicken bundles with nut mixture, and place in a shallow baking dish. Place uncovered dish in a 350° oven and bake for 30 to 35 minutes.
Heat remaining cranberry sauce in a saucepan and serve with chicken. Makes 6 servings.
